The absences

No synthetic pesticides

The cherry is grown without synthetic pesticide application.

No chemical fertilizer

Soil is maintained with organic matter from the farm itself.

No preservatives

Nothing is added to the bean at any stage after picking.

No artificial flavoring

What you taste is the lot, the altitude, and the roast level.

No clearing for rows

The trees grow under existing native canopy rather than in cleared rows.

No blending across origins

One lot goes in the bag. Nothing is cut with cheaper coffee.

The sequence

What happens between the soil and your counter.

  1. 01

    Hand picked ripe cherry

    Pickers take red cherry and leave the rest on the branch for a later pass.

  2. 02

    Pulped and fermented

    The skin comes off and the coffee ferments until the mucilage releases.

  3. 03

    Dried on raised beds

    Parchment dries in open air and is turned by hand, moisture controlled throughout.

  4. 04

    Hulled and sorted

    The parchment layer comes off and defects are removed before the lot ships.

  5. 05

    Roasted in small batches to order

    Coffee is roasted for the order in front of us, at the level you chose.

  6. 06

    Shipped within 48 hours of roasting

    Sealed with a one way valve and labeled with the roast date.
